Easy Peasy Blueberry Cake Recipe

These blueberry fairy cakes that I made over the weekend are almost too good to share (if I do say so myself) but that would be selfish so here it is. The recipe is from allrecipes and is meant to be for blueberry muffins, but I had no muffin cases so had to improvise and instead made some squishy looking fairy cakes but they still tasted good!

What you need

110g butter
250g plain flour
250g caster sugar
2 eggs
125ml milk
2 teaspoons baking powder
1/2 teaspoon salt
225g fresh blueberries

I didn’t have any baking powder, so omitted that and used self raising flour rather than plain. I also only used 150g blueberries, but that still seemed enough! 
 

What you do 

Preheat the oven oven to 180 C/Gas Mark 4. Line a tin with cake cases. Sieve all the dry ingredients together and leave to one side. 
Cream the butter and sugar. Add the eggs and beat well then add the milk. Add the flour/salt/baking powder and mix together, then stir in the blueberries. 
Spoon the mixture into cake cases then bake for 25-30 minutes. 
Leave them to cool down if you can bear it before tucking in!
